Vegetarian paella
Golden saffron rice studded with charred aubergine, courgette and mushrooms — a smoky, vegetarian one‑pan paella that feeds four.
Paella doesn't have to be all meat and seafood — this vegetarian version keeps the spirit of Spain with saffron-scented rice and a smoky nod from smoked paprika. It’s a superb one‑pan dinner for four and makes a great centrepiece for relaxed supper with friends.
Char the aubergine and courgette first so they stand up against the rice instead of going mushy. The pan should sing with little browned bits — that's where the flavour lives.
Ingredients
- 350 g paella rice
- 1 l good-quality vegetable stock
- 0 g saffron threads — crushed and steeped
- 10 ml smoked paprika
- 1 brown onion — medium, finely chopped
- 4 garlic cloves — crushed
- 400 g tinned chopped tomatoes
- 1 red pepper — deseeded and sliced
- 1 courgette — cut into 1cm half-moons
- 1 aubergine — cut into 2cm chunks
- 150 g chestnut mushrooms — quartered
- 100 g frozen peas
- 60 ml olive oil
- 75 ml dry white wine — optional but recommended
- 1 lemon — cut into wedges
- 15 g flat-leaf parsley — chopped
- 10 ml sea salt
- black pepper — freshly ground, to taste

Instructions
Warm the vegetable stock in a saucepan until just simmering, remove from the heat and stir in the crushed saffron threads. Leave to steep for 15 minutes so the saffron releases its colour and flavour.
Meanwhile, prepare the vegetables: finely chop the brown onion; crush the garlic cloves; slice the red pepper; cut the courgette into half-moons, the aubergine into 2cm chunks and quarter the chestnut mushrooms. Chop the flat-leaf parsley and set aside.
Heat half the olive oil in a large paella pan or a wide shallow frying pan over a medium–high heat. Add the aubergine and courgette in a single layer and fry until well browned and slightly softened, 6–8 minutes. Transfer to a plate and keep warm.
Reduce the heat to medium, add the remaining olive oil and cook the brown onion and garlic until translucent, about 3 minutes. Add the red pepper and chestnut mushrooms and cook a further 3 minutes until softened.
Stir in the paella rice and smoked paprika and cook for 1–2 minutes so each grain is lightly toasted and coated in oil.
Pour in the dry white wine and bubble for about 1 minute to lift any flavour from the base of the pan.
Add the tinned chopped tomatoes, stir briefly and simmer for 2 minutes to reduce slightly.
Carefully pour in the hot saffron-infused stock, season with the sea salt, spread the rice evenly (do not stir) and return the fried aubergine and courgette to the pan, tucking them into the rice surface. Bring to a steady simmer and cook, uncovered, for 16 minutes.
Scatter the frozen peas across the top and continue to cook for a further 4 minutes until the rice is just tender and most of the liquid has been absorbed.
Remove the pan from the heat. Cover loosely with a sheet of kitchen paper and then a lid or foil and rest for 10 minutes to finish steaming.
Uncover, scatter over the chopped flat-leaf parsley, crack over some black pepper, drizzle a little olive oil and serve with lemon wedges.
Tips
- If you don't have a paella pan, use the widest, shallowest frying pan you own so the liquid evaporates evenly.
- Toast the rice briefly before adding stock — it helps grains stay separate and gives a better texture.
- To encourage a socarrat (the treasured crisp base), increase the heat for the final 1–2 minutes but watch carefully to avoid burning.
- Make the stock and steep the saffron ahead — that 15-minute bloom can be done while you prep.
- Leftovers keep well in the fridge for 2 days; reheat gently with a splash of stock in a frying pan to avoid drying out.

FAQ
Can I make paella ahead and reheat it?
Yes — cool quickly, refrigerate for up to 48 hours. Reheat gently in a frying pan with a splash of hot stock so it steams through without drying.
Do I have to use saffron?
Saffron gives the classic aroma and colour; if you can't get it use turmeric for colour and ramp up the smoked paprika for smokiness, but the flavour will be different.
How do I know the rice is cooked?
The grains should be tender with a slight bite and most of the liquid absorbed. If still hard near the end, add small ladles of hot stock and cook a few minutes more.
Can I make this gluten-free?
Yes — use a gluten-free vegetable stock and check the smoked paprika and wine are gluten-free.
