Vegetarian moussaka with lentil ragu and cheesy béchamel
Layers of roasted aubergine and courgette with a spiced puy-lentil ragu, topped with a golden, cheesy béchamel. Comforting, meat-free and hearty.
This vegetarian moussaka swaps lamb for a rich puy-lentil ragu and keeps the soul of the dish: soft roasted aubergine, spiced tomato sauce and a luxuriously cheesy béchamel. It’s the kind of Sunday supper that feeds a crowd and reheats beautifully.
Make it when you want something comforting but vegetable-forward — it’s ideal for a meat-free Sunday roast alternative or a midweek treat with a simple green salad.
Ingredients
- 2 aubergine — about 800 g total, sliced 1 cm thick
- 1 courgette — large, sliced 1 cm thick
- 250 g chestnut mushrooms
- 400 g tinned puy lentils — drained weight about 240 g
- 1 brown onion — large, finely chopped
- 3 garlic cloves — crushed or finely sliced
- 75 ml dry red wine — optional, adds depth
- 400 g tinned chopped tomatoes
- 30 ml tomato purée
- 250 ml vegetable stock — hot
- 45 ml olive oil
- 50 g butter
- 40 g plain flour
- 600 ml milk — whole milk preferred
- 100 ml double cream
- 75 g vegetarian hard cheese — grated (vegetarian-friendly cheese)
- 5 ml dried oregano
- 0 ml ground cinnamon
- 1 bay leaf
- 0 ml ground nutmeg — freshly grated if possible
- 5 ml sugar — cuts tomato acidity
- 10 ml sea salt — total; use as directed in steps
- 5 ml ground black pepper
- 15 g fresh parsley — roughly chopped, to garnish

Instructions
Slice the aubergines 1 cm thick and lay the slices on a large plate or tray. Sprinkle 1 tsp sea salt evenly over both sides and leave to sweat for 30 minutes to draw out bitterness and excess moisture.
Meanwhile preheat the oven to 200°C fan/220°C conventional. Rinse the aubergine slices under cold water, pat very dry with kitchen paper, brush both sides with 1 tbsp olive oil and roast on a baking tray for 20 minutes, turning once, until golden and just tender.
While aubergines roast, heat 1 tbsp olive oil in a large frying pan over a medium heat. Add the brown onion and cook for 6–8 minutes until soft. Add the garlic and cook 1 minute more, then add the chestnut mushrooms and courgette and fry for 8–10 minutes until the mushrooms release their liquid and everything is golden.
Stir in the tomato purée and cook for 1 minute, then add the dry red wine and let it reduce for 2–3 minutes. Add the drained tinned puy lentils, tinned chopped tomatoes, vegetable stock, dried oregano, ground cinnamon, bay leaf, sugar, 0.5 tsp sea salt and 0.25 tsp ground black pepper. Bring to a gentle simmer and cook uncovered for 20–25 minutes until thickened into a ragu.
Remove the bay leaf and turn off the heat. Taste the lentil ragu and adjust seasoning if needed. Keep warm while you make the béchamel.
Heat the butter in a medium saucepan over a low–medium heat. When foaming, add the plain flour and stir constantly for 2 minutes to cook the roux (do not let it brown). Gradually whisk in the milk a little at a time, then bring to a gentle simmer and cook for 6–8 minutes until the sauce coats the back of a spoon and has thickened.
Remove from the heat and stir in the double cream, grated vegetarian hard cheese, ground nutmeg, 0.5 tsp sea salt and 0.25 tsp ground black pepper. Set aside a little grated cheese for the final topping.
Reduce the oven to 180°C fan/200°C conventional. Spoon a third of the lentil ragu into the base of a 23 x 33 cm ovenproof baking dish. Arrange a single layer of roasted aubergine over the ragu, then spread half the remaining ragu and a layer of courgette and mushrooms. Finish with the remaining ragu and a final overlapping aubergine layer.
Pour the béchamel evenly over the assembled layers and smooth the surface with a spatula. Sprinkle the reserved grated vegetarian hard cheese over the top.
Bake in the preheated oven for 40 minutes until the top is golden and the filling is bubbling around the edges. If the top browns too quickly, cover loosely with foil for the last 10 minutes.
Remove from the oven and leave to rest for 15 minutes before slicing. Scatter the chopped fresh parsley over the top and serve.
Tips
- Salt and rest the aubergine slices — it reduces bitterness and moisture, preventing a soggy bake.
- If your mushrooms release a lot of liquid, drain it off while frying so the ragu can reduce properly.
- Make the ragu and béchamel ahead and refrigerate; assemble and bake on the day for quicker dinner service.
- To reheat, cover and warm at 160°C fan/180°C conventional for 20–25 minutes; the resting step is important after reheating too.
- Use a sharp, serrated knife to slice neat portions; run the knife under hot water and dry between cuts for cleaner edges.
