Ingredients
- 240 ml quinoa
- 480 ml water
- 1 medium cucumber
- 200 g cherry tomatoes
- red onion — 1/4
- 100 g feta cheese
- kalamata olives — 1/4
- fresh parsley — 1/4
- 30 ml lemon juice
- 45 ml extra-virgin olive oil
- 5 ml dried oregano
- salt — 1/2
- black pepper — 1/4
Instructions
Rinse the quinoa under cold water in a fine mesh strainer to remove its bitterness.
In a medium saucepan, combine the rinsed quinoa with 2 cups of water. Bring to a boil over medium-high heat.
Once boiling, reduce heat to low, cover, and simmer until quinoa is tender and water is absorbed, about 15 minutes. Remove from heat and let it cool.
Dice the cucumber, halve the cherry tomatoes, and finely chop the red onion.
