These no-bake high-protein energy balls are the sort of snack that turns gym-goers into smug commuters. They’re chewy, crunchy and portable — perfect for stashing in a gym bag or desk drawer.
They sing because fats, fibre and whey protein combine to give steady energy rather than a sugar spike. Make a batch at the weekend and you’ve got breakfasts, pre-workout fuel and emergency snacks sorted for the week.
Ingredients
- 200 g pitted Medjool dates
- 120 g natural peanut butter — smooth or crunchy both work
- 60 g whey protein powder — vanilla or unflavoured
- 120 g rolled oats
- 30 g chia seeds
- 30 g ground flaxseed
- 30 g clear honey
- 15 g unsweetened cocoa powder — optional for a chocolate hit
- 30 g desiccated coconut — for rolling
- 30 g black sesame seeds — for rolling
- 20 g cacao nibs — for crunch
- 5 ml vanilla extract
- 0 ml fine sea salt

Instructions
Tip the rolled oats into a food processor and pulse for 20 seconds to break them down slightly — you want a coarse texture, not flour.
Add the pitted Medjool dates, natural peanut butter, whey protein powder, vanilla extract, fine sea salt and clear honey to the processor. Pulse in 1–2 second bursts until the mixture clumps together and is sticky — about 60 seconds total of pulsing. Stop and scrape the bowl once or twice.
Tip the paste into a bowl and fold in the chia seeds, ground flaxseed, unsweetened cocoa powder and cacao nibs until evenly distributed. If the mix feels too loose add 1–2 tbsp more rolled oats; if too dry, add 1 tbsp peanut butter or a splash of water.
Cover the bowl and chill in the fridge for 60 minutes to firm up. This makes the mixture much easier to roll.
Using damp hands, divide the mixture into 12 equal portions (about 28–30g each) and roll into tight balls. Spread desiccated coconut on one shallow plate and black sesame seeds on another; roll half the balls in coconut and half in sesame seeds. Place finished balls on a baking tray lined with baking paper.
Store in an airtight container in the fridge for up to 10 days or freeze for up to 3 months. Allow frozen balls to defrost for 20–30 minutes before eating.
Tips
- Use soft Medjool dates — if yours are dry, soak them in hot water for 10 minutes and drain before using.
- If the mix feels crumbly, pulse a few more seconds or add 1 tsp water at a time; if too wet, stir in 1 tbsp rolled oats.
- Make ahead: keep in the fridge for up to 10 days or freeze in a single layer then transfer to a container for up to 3 months.
- Weigh balls for consistent size and macros — aim for ~28–30g per ball for 12 portions.
- Chill the mixture well before rolling; it firms the fats and makes neater balls.

FAQ
Can I make these nut-free?
Yes — replace the peanut butter with sunflower seed butter and check your protein powder is nut-free. The flavour will be slightly different but still excellent.
Can I use different seeds or coatings?
Absolutely. Swap sesame for crushed nuts, puffed quinoa or extra desiccated coconut. Remember coatings add texture not much structure.
How do I stop them from sticking to my hands?
Wet your hands with a little water or lightly oil them. Chilling the mixture first also reduces stickiness significantly.
Can I reduce the sugar?
Dates and honey provide natural sweetness and binding. Reducing them will change texture; if you must, use fewer dates and add a tablespoon more nut butter and extra oats to compensate.
