High-protein cottage cheese & oat pancakes
Light, protein-packed cottage cheese and oat pancakes — quick to make, filling and perfect with yoghurt, berries and seeds.
These cottage cheese and oat pancakes pack proper protein without the stodgy feel of some breakfast options. They’re fast to make, keeping you full until lunch and flexible enough for sweet or savoury toppings.
Make them for a speedy weekend breakfast or batch the batter for weekday cooks — they reheat well in a dry frying pan or under a grill for a quick midweek boost.
Ingredients
- 200 g low-fat cottage cheese
- 80 g porridge oats — blitz to a flour in step 1
- 2 eggs — large
- 30 g whey protein powder — optional — if omitted increase cottage cheese to 250 g
- 5 g baking powder — about 1 tsp
- 0 ml sea salt
- black pepper — freshly ground, to taste
- 10 ml vegetable oil — for frying
- 150 g natural Greek yoghurt — for serving
- 150 g mixed berries — fresh or thawed
- 20 g mixed seeds — pumpkin, sunflower or a mix
- 10 g honey — optional drizzle

Instructions
Place the porridge oats in a blender or food processor and blitz until they form a fine flour (about 45–60 seconds). Tip: pulse in short bursts so the oats don’t heat up.
Add the low-fat cottage cheese, eggs, whey protein powder (if using), baking powder, sea salt and black pepper to the blender. Blitz to a smooth-ish batter — you’re aiming for thick but pourable (about 20–30 seconds). Scrape down the sides once if needed.
Leave the batter to rest for 5 minutes so the oat flour hydrates and the baking powder begins to work.
Heat a non-stick frying pan over a medium hob and add a little vegetable oil, swirling to coat. Spoon small pancakes (about 2 heaped tablespoons each) into the pan — you should get about 8 pancakes. Cook the first side for 2–3 minutes until bubbles form and the edges set, then flip and cook a further 1.5–2 minutes until golden and cooked through. Repeat, adding a little more oil if the pan dries.
To serve, stack 4 pancakes per person, spoon over natural Greek yoghurt, scatter mixed berries and mixed seeds, then drizzle a little honey if you like a touch of sweetness.
Tips
- If you don’t have a blender, use ready-made oat flour (80 g) and whisk the ingredients together — the texture will be very similar.
- To make ahead: cook the pancakes, cool completely, then store in the fridge in an airtight container for up to 48 hours. Reheat in a dry frying pan over a low hob for 1–2 minutes each side.
- If the batter is too thick after resting, loosen with 10–20 ml water or milk so it’s spoonable.
- For extra lift, separate the eggs and whisk the whites to soft peaks, fold into the batter at step 2 — this adds 2–3 minutes but makes them lighter.
- Use frozen berries straight from the freezer if fresh aren’t available; thaw slightly or pop them on top frozen (they’ll make a lovely compote-ish glaze).
