High‑Protein Blueberry Muffins
Portable, protein-packed muffins with whey and Greek yoghurt — great for breakfasts or gym snacks.
These high‑protein muffins are built for breakfast boxes and gym bags — they’re portable, quick to make and rely on whey and Greek yoghurt for a genuine protein boost. Oats and a little plain flour give body; blueberries add freshness.
Make a batch at the weekend and keep them in the fridge for easy post‑workout snacks. They’re forgiving, beginner‑friendly and bake in under half an hour once the oats have soaked.
Ingredients
- 200 g rolled oats
- 120 g whey protein powder — vanilla or unflavoured
- 100 g plain flour
- 10 ml baking powder — about 8 g
- 5 ml bicarbonate of soda — about 3 g
- 5 ml fine sea salt — about 3 g
- 5 ml ground cinnamon
- 3 large eggs
- 200 g Greek yoghurt — use high‑protein/0% if possible
- 120 ml semi-skimmed milk
- 60 ml honey
- 60 ml sunflower oil — or neutral vegetable oil
- 5 ml vanilla extract — about 5 ml
- 150 g blueberries — fresh or frozen

Instructions
Preheat the oven to 180°C fan/200°C conventional. Line a 12‑hole muffin tin with cases or lightly grease each hole.
Put the rolled oats and the semi-skimmed milk into a bowl, stir to combine and leave to soak for 15 minutes — this softens the oats and prevents dry muffins.
While the oats soak, whisk together whey protein powder, plain flour, baking powder, bicarbonate of soda, fine sea salt and ground cinnamon in a large bowl.
In another bowl, beat the large eggs with the Greek yoghurt, honey, sunflower oil and vanilla extract until smooth. Stir the soaked oats into the wet mix.
Fold the wet ingredients into the dry ingredients until just combined, then gently fold in the blueberries. Do not overmix — a few streaks of flour are fine.
Divide the batter evenly between the 12 cases (heaped tablespoon or an ice cream scoop works well). Bake in the preheated oven for 18–22 minutes until golden and a skewer inserted into the centre comes out clean.
Leave the muffins to cool in the tin for 10 minutes, then transfer to a wire rack to cool completely.
Tips
- If you use frozen blueberries, fold them in straight from the freezer — they bleed less than thawed fruit.
- For firmer, drier muffins (better for lunchboxes) leave them to cool fully in the tin for 10 minutes before transferring; for softer muffins, cool fully on the rack.
- To increase protein without changing texture much, replace 30 g of the plain flour with extra whey powder or add two extra egg whites.
- Make‑ahead: keep in an airtight container in the fridge for up to 4 days or freeze individually for up to 3 months; defrost at room temperature or warm briefly in a low oven.
- Weigh ingredients where possible — whey and oats are hygroscopic and spoon measures vary a lot.

FAQ
Can I make these muffins without whey protein?
Yes — omit the whey and replace with 50 g extra plain flour and a further tablespoon of Greek yoghurt to preserve moisture; protein will be lower.
Why are my muffins dense?
Common causes are overmixing the batter, not letting the oats hydrate, or too much protein powder without extra liquid. Fold gently and follow the soak time.
Can I add nuts or chocolate?
Yes — fold in 60 g chopped nuts or 60 g dark chocolate chips. That increases calories and changes texture, but is delicious.
How should I reheat frozen muffins?
Defrost at room temperature or microwave for 20–30 seconds from frozen; for a crisper top, warm at 150°C fan/170°C conventional for 6–8 minutes.
