Gluten-free Beef Lasagne
A rich, cheesy gluten-free lasagne with a slow-simmered beef ragu and creamy béchamel — comforting dinner for the family.
This is a proper family lasagne but adapted for gluten-free cupboards — all the comfort you expect, none of the gluten. A slow-simmered beef ragu and a silky gluten-free béchamel make it indulgent yet reliable.
Make it for a weekend batch-cook, for guests, or when you need a dish that feeds a crowd and reheats beautifully. It benefits from a short rest after baking so plan that 15 minutes in your dinner timeline.
Ingredients
- 250 g gluten-free lasagne sheets
- 600 g beef mince — lean or regular, your preference
- 30 ml olive oil
- 2 brown onion — finely chopped
- 3 garlic cloves — crushed
- 1 carrot — finely diced
- 2 celery stalks — finely diced
- 30 g tomato purée
- 700 ml passata
- 300 ml beef stock — hot
- 100 ml red wine — optional
- 5 ml dried oregano
- 1 bay leaf
- 5 ml caster sugar — cuts acidity
- 60 g unsalted butter — for béchamel
- 40 g gluten-free plain flour — for béchamel
- 600 ml whole milk — warmed
- 1 pinch ground nutmeg — freshly grated if possible
- 300 g shredded mozzarella
- 60 g grated Parmesan
- sea salt — to taste
- black pepper — freshly ground, to taste

Instructions
Heat the oven to 180°C fan/200°C conventional and set an ovenproof dish (about 30 x 20 cm) to one side.
Warm a large frying pan over a medium hob, add the olive oil and the beef mince. Brown the mince until well coloured, about 8 minutes, breaking it up with a wooden spoon.
Push the browned mince to one side, add the chopped brown onion, garlic cloves, carrot and celery stalks to the pan and sauté until softened, about 7 minutes.
Stir in the tomato purée and cook for 2 minutes to remove the raw edge.
Pour in the red wine (if using) and bubble briskly until reduced by about half, roughly 4 minutes.
Add the passata, beef stock, dried oregano, bay leaf, caster sugar and a pinch of sea salt and black pepper. Bring to a simmer, then lower the heat and gently simmer, uncovered, for 45 minutes until thick and glossy. Taste and adjust seasoning.
While the ragu simmers, make the béchamel: melt the unsalted butter in a saucepan over a medium hob, stir in the gluten-free plain flour and cook for 1–2 minutes. Gradually whisk in the warmed whole milk until smooth, then simmer gently, whisking, for 6–8 minutes until thickened. Season with a little sea salt, black pepper and the ground nutmeg.
Assemble the lasagne: spread a thin layer of ragu in the base of the ovenproof dish, cover with a single layer of gluten-free lasagne sheets, spread more ragu, spoon over béchamel and scatter with shredded mozzarella and a little grated Parmesan. Repeat to make three layers, finishing with a top layer of béchamel and the remaining cheeses.
Bake in the preheated oven for 35 minutes until the top is bubbling and golden. If the top is colouring too quickly, cover loosely with foil for the last 10 minutes.
Allow the lasagne to rest for 15 minutes before cutting. This helps it set and makes neater slices.
Tips
- If your gluten-free lasagne sheets state they need pre-boiling, follow the packet instructions — most modern sheets are oven-ready but check the pack.
- Use warm milk when making the béchamel to reduce the chance of lumps and speed up thickening.
- Make the ragu a day ahead — flavours deepen and it makes assembly stress-free on the day.
- If you have leftover lasagne, cool to room temperature then refrigerate in an airtight container for up to 3 days or freeze for up to 2 months.
- When reheating slices from fridge, cover with foil and warm at 160°C fan/180°C conventional for 20–25 minutes to heat through without drying out.

FAQ
Do I need to boil gluten-free lasagne sheets first?
Check the packet; many modern gluten-free sheets are oven-ready. If the pack says to pre-cook, simmer briefly according to instructions and cool on kitchen paper before layering.
Can I make this vegetarian?
Yes — replace the beef mince with 800 g mixed mushrooms and a tin of lentils (drained) and cook until the moisture has mostly evaporated before proceeding.
Why did my lasagne go watery?
Most likely too much liquid in the ragu or the sheets needed pre-cooking. Reduce the ragu longer to concentrate it, and ensure béchamel is thick before assembling.
Can I assemble ahead and bake later?
Yes — assemble, cover with cling film and refrigerate for up to 24 hours, then bake for an extra 5–10 minutes until piping hot through.
