Classic Full English Breakfast (serves 4)
A proper British fry‑up with sausages, back bacon, black pudding, fried eggs, sautéed mushrooms, roasted tomatoes, baked beans, toast and optional hash browns — hearty, unfussy and cooked so everything finishes hot at the same time.
This is the full English — a glorious plate of fried, roasted and buttered things that refuses to be dainty. It’s perfect for a lazy weekend morning, a hangover rescue mission or any time you need breakfast to feel like a proper event.
What makes it sing is timing: roast the sausages and tomatoes in the oven so they don’t steal precious hob space, use rendered bacon fat to flavour fried bread and mushrooms, and finish eggs last so they’re hot and glossy. It’s not tricky, just orchestration — and utterly worth it.
Ingredients
- 8 pork sausages — approx. 70–90 g each (traditional British sausages)
- 8 back bacon rashers — or 8 streaky if you prefer crispier fat
- 8 slices black pudding — about 20–25 g per slice (optional)
- 4 large eggs — one per person (add more if you like 2 each)
- 2 x 400 g cans baked beans — total 800 g
- 400 g chestnut or button mushrooms — halved or sliced
- 4 ripe tomatoes — large, halved (or use 8 cherry tomatoes on the vine)
- 8 bread slices — thick-cut white or granary; use gluten-free if needed
- 8 pieces ready-made hash browns — optional; or make 400 g shredded potato hash browns
- 40 g unsalted butter — for toast and frying (about 1½ tbsp)
- 30 ml vegetable oil
- 15 ml olive oil — for roasting tomatoes (optional)
- sea salt — to taste
- freshly ground black pepper — to taste
- 15 ml fresh parsley — chopped, for garnish (optional)

Instructions
Preheat your oven to 200°C (180°C fan). Put a large baking tray in the oven to warm for 3 minutes.
Arrange the sausages (8) and halved tomatoes (4, cut side up) on the hot baking tray. Drizzle the tomatoes with 1 tbsp olive oil and a pinch of salt and pepper. Put the tray in the oven and roast.
While sausages roast, heat a large non-stick or cast-iron frying pan over medium heat. Add 1 tbsp vegetable oil. When hot, add the mushrooms (400 g) in a single layer and sauté for 6–8 minutes until golden and any moisture has evaporated. Season with salt and pepper and transfer to a warm plate.
Using the same pan (add a touch more oil if dry), fry the back bacon (8 rashers) over medium heat. Cook 3–4 minutes per side until rendered and lightly crisp (longer for streaky). Transfer to a tray and keep warm in a low oven (or cover loosely with foil).
In the same pan, fry black pudding slices (if using) 2–3 minutes per side until a crisp crust forms. Transfer to the warm tray with the bacon.
If using hash browns, cook them now according to packet instructions in a clean pan or the same pan (about 3–5 minutes each side) until golden and crisp. Keep warm.
Put a small saucepan on low and pour in the two cans of baked beans (800 g). Heat gently, stirring occasionally — keep covered and warm until ready to serve.
About 6–8 minutes before the sausages and tomatoes finish, melt 20 g butter in a clean non-stick frying pan over medium-low for frying the eggs. Crack eggs into a small bowl first, then slide into the pan. Cook 3–4 minutes for sunny side up (or 5–6 minutes for slightly set yolks). Season with salt and pepper.
While the eggs cook, toast 8 slices of bread and spread with the remaining butter (20 g). If you prefer fried bread, use the bacon fat in the frying pan: heat 1–2 tbsp, add bread and fry 1–2 minutes per side until golden (critical: use only a thin film of hot fat).
Give the beans a final stir and check seasoning. Remove sausages and tomatoes from the oven. Cut one sausage to confirm cooked through (no pink, clear juices) or use a meat thermometer (75°C).
Assemble: divide sausages, bacon, black pudding, mushrooms, tomatoes, eggs, beans and toast (or fried bread) evenly between 4 plates. Sprinkle chopped parsley if using and grind extra black pepper to finish.
Serve immediately while everything is hot. If plating for a crowd, keep cooked items in a low oven (80–90°C) on a tray while finishing remaining elements so nothing goes cold.

- Roast sausages and tomatoes together to save hob space; turn sausages once halfway so they brown evenly.
