Tofu Noodle-Pasta Salad: A Healthy and Tasty Italian Dish

Ingredients:

  • 1 package of firm tofu, drained and cubed
  • 8 ounces of noodles (spaghetti, linguine, or fettuccine)
  • 1/4 cup of soy sauce

Optional Extra

Ingredients:

  • 1 cup of chopped veggies (red bell pepper, broccoli, carrots)
  • 1/4 cup of chopped parsley or cilantro
  • 1/4 cup of chopped peanuts or cashews

Preparation & Cooking Time:

Prep Time: 10 minutes
Cooking Time: 20 minutes
Total Time: 30 minutes

Method:

  1. Cook the noodles according to the package instructions. Drain and set aside.
  2. In a large bowl, mix the tofu with the soy sauce. Cover and marinate for 10 minutes.
  3. In a skillet, heat a tablespoon of oil over medium-high heat. Add the tofu and cook for about 5 minutes, or until golden brown on all sides. Remove from heat and let it cool down.
  4. In a large mixing bowl, combine the cooked noodles, cooked tofu, and any additional chopped veggies, herbs, or nuts you choose to add. Mix well.
  5. Serve chilled or at room temperature.
