The Fishy Rice Delight

Ingredients:
– 400g (14 oz) haddock fillets
– 4 large eggs
– 250g (1 1/4 cups) rice
Optional Extra
Ingredients:
– 1 small onion, finely chopped
– 1 garlic clove, minced
– 1 red bell pepper, diced
– 100g (1/2 cup) frozen peas
– 1 tablespoon soy sauce
– Freshly squeezed lime juice
– Chopped fresh cilantro (coriander), for garnish
– Red chili flakes, for an extra kick

Cooking: 20 minutes
Method:
1. Preheat the oven to 180°C (350°F/Gas Mark 4).
2. Place the haddock fillets on a baking sheet and bake for 15-20 minutes or until the fish flakes easily with a fork. Once cooked, remove from the oven and set aside.
3. While the fish is baking, cook the rice according to the package instructions until tender and fluffy.
4. In a separate pan, boil the eggs for approximately 8-10 minutes until hard-boiled. Once done, drain and let them cool before peeling and slicing.
5. If using the optional extra ingredients, heat a little oil in a large pan over medium heat. Sauté the onion, garlic, and red bell pepper until softened. Add the frozen peas and cook until heated through.
6. Fluff the rice with a fork and add it to the pan with the optional ingredients. Mix well to combine.
7. To serve, portion the rice onto individual plates. Top each portion with a haddock fillet and a sliced hard-boiled egg. Drizzle with soy sauce and a squeeze of lime juice. Garnish with chopped fresh cilantro and red chili flakes, if desired.
