The Creamy Cheesy Peas-terpiece Pasta

Ingredients:
– 200g butterbeans
– 200g peas
– 250g pasta
– 200ml coconut milk
– 150g cheese (cheddar or any other favourite cheese)
Optional Extra
Ingredients:
– Handful of fresh basil leaves
– Black pepper to taste
– Freshly grated parmesan for topping

Method:
1. Cook the pasta according to the instructions on the packet. Drain and set aside.
2. In a separate pot, bring water to a boil and blanch the peas for 2 minutes. Remove the peas from the boiling water and set aside.
3. In the same pot, simmer the butterbeans in the coconut milk for 5 minutes until they become soft and creamy.
4. Using a blender or food processor, blend the butterbeans and coconut milk mixture until smooth. You can add a splash of water if needed to achieve the desired consistency.
5. Return the blended mixture to the pot and add the cooked pasta and peas. Stir well to coat the pasta and peas with the creamy sauce.
6. Grate the cheese and add it to the pot. Stir until the cheese melts and becomes gooey, creating a rich and creamy sauce.
7. Optional: Tear the basil leaves into small pieces and toss them into the pasta for a burst of freshness.
8. Add black pepper to taste, giving your dish a subtle kick.
9. Serve the Creamy Cheesy Peas-terpiece Pasta hot, with a sprinkle of freshly grated parmesan on top.
