Recipe: Pork-Me-Up Scrumptious Stir-Fry
Ingredients
- 500g lean pork tenderloin, sliced into thin strips
- 1 yellow bell pepper, sliced
- 1 red bell pepper, sliced
- 2 cloves garlic, minced
- 1 tablespoon ginger, minced
- 100g sugar snap peas
- 1 medium onion, thinly sliced
- 3 tablespoons soy sauce
- 2 tablespoons hoisin sauce
- 1 tablespoon vegetable oil
- 1 teaspoon crushed red pepper flakes (optional)
Optional Extra Ingredients
- 100g sliced water chestnuts
- 100g sliced bamboo shoots
- 1 tablespoon sesame seeds for garnish

Method
- Heat the oil in a wok or large frying pan over medium-high heat.
- Add the pork and cook until browned and cooked through. Remove from the pan and set aside.
- In the same pan, add the onion, peppers, garlic, and ginger. Stir-fry for approximately 5 minutes or until the vegetables are tender.
- Return the pork to the pan, along with the sugar snap peas and optional ingredients if using.
- Add the soy sauce and hoisin sauce, and stir well to combine.
- cook for another 2-3 minutes, or until everything is heated through and covered in sauce.
- Optional: toss in crushed red pepper flakes for added spice.
- Serve hot, garnished with sesame seeds if desired.
