Potato-tastic Broccoli Bake

Ingredients:
– 500g new potatoes
– 1 medium-sized broccoli, cut into florets
– 200ml white sauce
– 2 ripe tomatoes, sliced

– 2 cloves of garlic, minced
– Freshly ground black pepper, to taste

Method:
1. Preheat your oven to 200°C (400°F).
2. Bring a pot of salted water to a boil, then add the new potatoes and cook them until they are tender. Drain and set aside.
3. In the same pot, steam the broccoli florets for about 5 minutes until they are slightly tender. Remove from heat and set aside.
4. In a small saucepan, warm up the white sauce over medium heat. If desired, add minced garlic for extra flavor. Stir occasionally until heated through.
5. Cut the cooked new potatoes into halves or quarters, depending on their size. Arrange them evenly in a baking dish.
6. Spread the steamed broccoli florets over the potatoes. Pour the warm white sauce on top, ensuring the potatoes and broccoli are well-coated.
7. Layer the sliced tomatoes over the sauce. Season with black pepper, if desired, for some extra zing.
8. If you’re feeling cheesy, sprinkle the grated Cheddar cheese over the whole dish.
9. Bake in the preheated oven for approximately 15-20 minutes, or until the cheese is golden and bubbling.
10. Once cooked, remove from the oven and let it cool for a few minutes before serving.
