Lazy Sunday Morning Pancakes
Ingredients:
- 150g self-raising flour
- 1 tbsp caster sugar
- 1 tsp baking powder
- 1 pinch of salt
- 1 egg
- 125ml milk
- 25g butter, melted
- 1 tsp vanilla extract
Optional Extra
Ingredients:
- Handful of fresh berries (e.g., blueberries, raspberries, or sliced strawberries)
- Maple syrup for serving
- Dollop of whipped cream or Greek yogurt
- Dusting of icing sugar

Method:
- In a mixing bowl, combine the flour, sugar, baking powder, and salt.
- In a separate bowl, whisk together the egg, milk, melted butter, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and whisk until just combined. Be careful not to overmix; a few lumps are completely fine.
- If you’d like some extra sweetness and texture, gently fold in a handful of fresh berries.
- Heat a non-stick frying pan or griddle over medium-low heat.
- Using a ladle or spoon, pour a portion of the pancake batter onto the pan. Cook until bubbles form on the surface, then flip the pancake and cook until golden brown on both sides. Repeat this step for the remaining batter, adjusting the heat if necessary to prevent burning.
- Transfer the cooked pancakes to a warm plate and cover with a clean kitchen towel to keep them warm while you cook the rest.
- Serve the pancakes stacked high, topped with a pat of butter, a drizzle of maple syrup, a dollop of whipped cream or Greek yogurt, and a dusting of icing sugar if desired.
