Creepy Korma Monster
Ingredients:
– 500g chicken thighs, boneless and skinless
– 2 tablespoons vegetable oil
– 2 onions, finely chopped
– 4 garlic cloves, minced
– 1-inch piece of ginger, grated
– 2 teaspoons cumin powder
– 2 teaspoons coriander powder
– 1 teaspoon turmeric powder
– 1 teaspoon garam masala
– 1 teaspoon paprika
– 1 teaspoon chili powder
– 200ml coconut milk
– 400g tinned chopped tomatoes
– Handful of fresh coriander leaves, chopped
– Salt, to taste
– Black pepper, to taste
Optional Extra
Ingredients:
– 1 red bell pepper, sliced
– 1 green bell pepper, sliced
– 150g frozen peas
– Severed fingers (carrot sticks)
Preparation & Cooking Time:
Preparation: 15 minutes
Cooking Time: 35 minutes
Method:
1. Heat the oil in a large pan over medium heat.
2. Add the onions, garlic, and ginger, and sauté until golden brown.
3. Add the chicken thighs and cook until browned on all sides.
4. Add the cumin powder, coriander powder, turmeric powder, garam masala, paprika, and chili powder. Stir well to coat the chicken.
5. Pour in the coconut milk and chopped tomatoes. Reduce the heat to low and simmer for 20 minutes, stirring occasionally.
6. If using, add the sliced bell peppers and frozen peas. Cook for an additional 10 minutes until the vegetables are tender.
7. Season with salt and black pepper to taste.
8. Serve the Creepy Korma Monster over steamed rice, garnished with fresh coriander leaves.
9. For an extra spooky touch, serve with severed fingers (carrot sticks).
