“Bacon Mushroom Madness”

Ingredients:
– 8 slices of bacon
– 250g (8.8 oz) mushrooms, sliced
– 1 onion, finely chopped
– 2 garlic cloves, minced
– 200ml (7 fl oz) double cream
– 1 tablespoon butter
– Salt and pepper to taste
– Fresh parsley, chopped (for garnish)
Optional Extra

– 1 red bell pepper, sliced
– 1 teaspoon dried thyme
– Grated cheese (e.g. Parmesan or Cheddar) for topping

Method:
1. In a large frying pan, cook the bacon slices over medium heat until crispy. Remove from the pan and set aside on kitchen paper to drain excess oil.
2. In the same pan, melt the butter. Add the chopped onion and minced garlic, and sauté until softened and fragrant.
3. Add the sliced mushrooms (and optional red bell pepper) to the pan. Cook until the mushrooms are golden brown and any released liquid has evaporated.
4. Stir in the double cream and dried thyme (if using). Season with salt and pepper to taste. Cook for a further 2-3 minutes to allow the flavors to meld together.
5. Crumble the cooked bacon into the mushroom mixture, reserving some for garnish. Stir everything together.
6. Sprinkle grated cheese over the top (if desired), cover the pan with a lid, and let it melt for 1-2 minutes.
7. Serve hot, garnished with the reserved crumbled bacon and fresh chopped parsley.
