The Finger-Lickin’ Rib Masterpiece
Ingredients:
For the ribs:
- 1.5 kg pork spare ribs
- 2 tablespoons brown sugar
- 2 teaspoons smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon ground cumin
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
For the barbecue sauce:
- 200ml tomato ketchup
- 2 tablespoons apple cider vinegar
- 2 tablespoons Worcestershire sauce
- 1 tablespoon honey
- 1 tablespoon Dijon mustard
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon cayenne pepper (adjust to taste)

Preparation & Cooking Time:
Preparation Time: 20 minutes
Cooking Time: 2 hours and 30 minutes
Method:
1. Preheat the oven to 160°C (320°F).
2. In a small bowl, mix together the brown sugar, smoked paprika, garlic powder, onion powder, ground cumin, dried thyme, salt, and black pepper to make a dry rub.
3. Rub the dry mixture all over the ribs, ensuring they are evenly coated.
4. Place the ribs on a baking tray and cover tightly with foil.
5. Bake in the preheated oven for 2 hours.
6. While the ribs are baking, prepare the barbecue sauce by combining tomato ketchup, apple cider vinegar, Worcestershire sauce, honey, Dijon mustard, smoked paprika, garlic powder, onion powder, and cayenne pepper in a saucepan.
7. Bring the sauce to a simmer over medium heat, stirring occasionally, and let it cook for 10 minutes until thickened slightly.
8. After 2 hours of baking, remove the foil from the ribs and generously brush the barbecue sauce over both sides.
9. Increase the oven temperature to 220°C (430°F).
10. Return the ribs to the oven and bake uncovered for an additional 20-30 minutes until the sauce is sticky and caramelized.
11. Once fully cooked, remove the ribs from the oven and let them rest for a few minutes.
12. Serve the sticky BBQ ribs with your choice of optional extra ingredients, and enjoy!
