A-Mince-ing Delight
Number of Portions:
4 servings
Ingredients:
– 300g Carrots
– 1 large Courgette
– 500g Mince (beef or turkey)
– 2 medium Sweet potatoes
Optional Extra
Ingredients:
– 1 tablespoon Olive oil
– 2 cloves of Garlic, minced
– 1 teaspoon Paprika
– Salt and pepper to taste
– Grated cheese for topping
Preparation & Cooking Time:
60 minutes
Method:
1. Preheat the oven to 180°C (350°F).
2. Peel and grate the carrots. Place them in a large bowl.
3. Grate the courgette and add it to the same bowl.
4. In a separate pan, brown the mince over medium heat until cooked through. Drain any excess fat.
5. Add the cooked mince to the bowl with grated vegetables and mix well.
6. Peel and thinly slice the sweet potatoes.
7. Heat olive oil in a pan over medium heat and sauté the minced garlic until golden brown. Remove from heat.
8. In a greased baking dish, layer half of the vegetable and mince mixture as the base.
9. Evenly spread half of the sliced sweet potatoes over the base.
10. Drizzle half of the garlic-infused olive oil over the sweet potatoes.
11. Repeat steps 8-10 for another layer.
12. Sprinkle paprika, salt, and pepper evenly over the top layer.
13. Cover the dish with foil and bake for 30 minutes.
14. Remove the foil and bake for an additional 10 minutes, or until the sweet potatoes are tender.
15. If desired, sprinkle grated cheese on top and bake for another 5 minutes, or until the cheese melts and turns golden.
16. Remove from the oven and let it cool for a few minutes before serving.
