“Squashing the Bacon Beast”
Ingredients:
– 1 Butternut squash
– 1 Courgette (Zucchini)
– 200g Tofu
– 6 slices of Bacon
– 1 Onion
– 100g Cheese of your choice
Optional Extra
Ingredients:
– 1 Red bell pepper
– 2 cloves of Garlic
– Fresh herbs (e.g., thyme or parsley)
Preparation & Cooking Time:
30 minutes
Method:
1. Preheat your oven to 200°C (400°F).
2. Cut the butternut squash in half lengthwise. Remove the seeds and peel the skin using a vegetable peeler or a knife. Cut the squash into small cubes.
3. Slice the courgette into rounds or half-moons, depending on your preference.
4. Dice the tofu into small cubes.
5. Fry the bacon slices in a large frying pan until crispy. Once cooked, remove from the pan and crumble into small pieces.
6. In the same pan, sauté the onion until it turns translucent. If desired, you can also add the optional ingredients here, such as diced red bell pepper or minced garlic.
7. Add the butternut squash cubes and cook for approximately 10 minutes, stirring occasionally, until they start to soften.
8. Next, add the courgette slices and cubed tofu. Cook for an additional 5 minutes, allowing the flavors to meld together.
9. Transfer the mixture to an oven-safe dish. Sprinkle the crumbled bacon on top.
10. Grate the cheese and generously sprinkle it over the bacon and vegetable mixture.
11. Place the dish in the preheated oven and bake for approximately 10 minutes, or until the cheese has melted and turned golden brown.
12. Remove from the oven, let it cool for a few minutes, and serve hot.
