Ingredients
- 500 g minced beef — about 20% fat
- 1 brown onion — finely chopped
- 2 garlic cloves — crushed
- 300 g chestnut mushrooms — sliced
- 30 ml vegetable oil
- 30 ml plain flour
- 300 ml beef stock — hot
- 150 ml milk
- 5 ml Worcestershire sauce
- 200 g frozen mixed vegetables — peas, carrots and sweetcorn mix
- 700 g tater tots — frozen
- 150 g mature cheddar — grated
- 15 g fresh parsley — chopped, to garnish
- 5 ml sea salt
- 5 ml black pepper — freshly ground

Instructions
Preheat the oven to 200°C fan/220°C conventional.
Heat the vegetable oil in a large frying pan over a medium–high hob. Add the minced beef and brown, breaking it up with a wooden spoon; cook until no longer pink and most of the moisture has evaporated, about 10 minutes. Season with sea salt and black pepper.
Add the brown onion and continue to cook for 4–5 minutes until softened. Stir in the garlic cloves and chestnut mushrooms and cook a further 4–5 minutes until the mushrooms have released their liquid and are soft.
Sprinkle over the plain flour and stir well to coat the meat and veg; cook for 1 minute to remove the raw flour taste.
Gradually pour in the hot beef stock, stirring to combine. Add the milk, Worcestershire sauce and frozen mixed vegetables. Bring to a gentle simmer and cook for 3–4 minutes until the mixture has thickened slightly; taste and adjust seasoning.
Spoon the beef and vegetable mixture into an ovenproof baking dish and spread into an even layer.
Arrange the tater tots in a single layer over the beef mixture, then sprinkle the mature cheddar evenly on top.
Bake in the preheated oven for 30 minutes, or until the tater tots are golden and crisp and the cheese has melted.
Remove from the oven and leave to rest for 10 minutes to let the filling set.
Scatter the chopped fresh parsley over the top and serve straight from the dish.
Tips
- For crisper tots, bake them on a separate tray for 8–10 minutes first, then place on the beef mixture before the final bake.
- Assemble the casserole, cover and chill up to 24 hours; add about 10 minutes to the oven time if baked straight from the fridge.
- If you prefer a saucier filling, add up to 75 ml extra milk or stock when simmering; if it’s too thin, simmer a little longer to reduce.
- Use a wide, shallow ovenproof dish so the tots sit in a single layer — deeper dishes can make tots steam rather than crisp.
- Leftovers keep well in the fridge for up to 3 days; reheat in a 180°C fan oven for 15–20 minutes to crisp the top again.
