Spooky Halloween Chocolate Cupcakes with Buttercream and Fondant

These chocolate Halloween cupcakes are the sort of fuss-free showstoppers that make you look like you spent hours—when in truth you didn’t. Moist chocolate cases, silky buttercream and simple fondant cut-outs let you get creative with spooky faces and pumpkins.
They’re brilliant for parties, classroom treats or a last-minute themed bake. Make the cupcakes earlier in the day and finish the decorating just before guests arrive for best texture and colour.
Ingredients
- 160 g plain flour
- 160 g caster sugar
- 40 g unsweetened cocoa powder
- 5 ml baking powder
- 5 ml bicarbonate of soda
- 5 ml fine salt
- 2 eggs
- 190 ml milk — total: 160 ml for the batter + 30 ml for the buttercream
- 160 ml vegetable oil
- 10 ml vanilla extract — total: 1 tsp for batter + 1 tsp for buttercream
- 200 g unsalted butter — for buttercream; softened
- 400 g icing sugar
- 5 ml black gel food colouring — use sparingly — gel is strong
- 5 ml orange gel food colouring
- 200 g ready-to-roll fondant — white, for cut-outs
- 30 g candy eyes — small pack
- 25 g Halloween sprinkles — optional

Instructions
Preheat the oven to 180°C fan/200°C conventional. Line a 12-hole muffin tin with paper cases.
Sift together the plain flour, unsweetened cocoa powder, baking powder, bicarbonate of soda and fine salt into a large bowl. Stir in the caster sugar so the dry mix is even.
In a separate jug, whisk the eggs, milk, vegetable oil and 1 tsp vanilla extract until combined. Make a well in the dry ingredients and pour in the wet mix. Stir with a spatula until just combined — the batter will be loose.
Divide the batter evenly between the 12 paper cases (about 2 heaped tablespoons each). Tap the tin once on the work surface to settle the batter.
Bake on the middle shelf for 18 minutes. They are done when a skewer inserted into the centre comes out with a few moist crumbs but not wet batter.
Remove the tin and leave the cupcakes to cool in the tin for 5 minutes, then transfer to a cooling rack to cool completely.
Make the buttercream: beat the unsalted butter in a bowl with an electric mixer until pale and fluffy (about 3–4 minutes). Gradually add the icing sugar, then 30 ml milk and the remaining 1 tsp vanilla extract. Beat until silky and pipeable; if too stiff add a little more milk, a teaspoon at a time.
Spoon about two-thirds of the buttercream into a piping bag fitted with a large star nozzle. Divide the remaining buttercream into two small bowls and colour one with a little orange gel food colouring and the other with a tiny amount of black gel food colouring for accents.
Pipe a swirl of buttercream onto each cooled cupcake. Use the orange buttercream to pipe small pumpkins or borders and the black buttercream for spider legs or mouths. Press candy eyes into swirls or attach with a dot of buttercream.
Roll out the ready-to-roll fondant on a lightly dusted surface and cut spooky shapes (ghosts, bats, pumpkins) with small cutters or a knife. Attach shapes to cupcakes using a small dab of buttercream and finish with Halloween sprinkles.
Chill the decorated cupcakes in the fridge for 30 minutes to set the buttercream and stabilise fondant before serving.
Tips
- Sift the cocoa and plain flour to avoid lumpy batter and grey, uneven tops.
- If you need flat-topped cupcakes for decorating, press a square of baking paper on top of each warm cupcake for 30 seconds after baking.
- Use gel food colouring for brighter shades without thinning the buttercream; add colour a little at a time.
- Make buttercream ahead and chill; bring back to room temperature and rewhip briefly before piping.
- Transport decorated cupcakes in a single layer in a shallow box; chill first so decorations don't shift.
