Instructions
Place the eggs in a single layer in a saucepan and cover with cold water by 2cm. Bring to a rolling boil over medium heat, then reduce to a gentle simmer and cook for 8 minutes for a firm but creamy yolk.

Stir in the coconut milk and 100ml water, bring to a gentle simmer and cook for 5 minutes to marry the flavours and loosen the sauce.
Optional (adds texture): heat 1 tbsp oil in a frying pan over medium heat and brown the peeled eggs for 2–3 minutes, turning so they colour all over. This step is quick but worthwhile.
Nestle the whole or halved eggs into the simmering gravy, cover and simmer gently for 6 minutes to let the flavours infuse.
