Ingredients
- 600 g minced beef — 20% fat recommended for juiciness
- 2 egg
- 40 g almond flour
- 40 g grated Parmesan

- 15 g fresh parsley — finely chopped, plus extra to finish
- 5 ml dried oregano
- 5 ml sea salt

Instructions
Put the minced beef, egg, almond flour, grated Parmesan, grated brown onion, 1 crushed garlic clove, chopped fresh parsley, dried oregano, sea salt and black pepper into a large bowl. Mix gently until just combined — stop as soon as the ingredients are evenly distributed.
Cover the bowl and chill the mixture in the fridge for 15 minutes to let the almond flour absorb moisture — this firms the mixture and helps the meatballs hold their shape.
Divide the mix into 16 equal portions (about 35–40g each) and roll lightly into smooth balls. Keep them slightly loose rather than compacted.
Heat the olive oil in a large frying pan over medium heat. Fry the meatballs in batches so the pan isn’t crowded and they brown evenly — about 8 minutes per batch, turning so all sides colour. Transfer browned meatballs to a plate.
Add the butter to the same pan and, once foaming, add the sliced chestnut mushrooms. Cook over medium heat until the mushrooms are golden and any moisture has evaporated — about 6 minutes.
Stir in the remaining crushed garlic clove and the Dijon mustard, cooking for 30 seconds to release the aroma.
Pour in the beef stock and use a wooden spoon to scrape any browned bits from the base of the pan. Bring to a gentle simmer and reduce for 4 minutes.
Stir in the double cream, lemon juice and red pepper flakes (if using). Gently simmer for 3 minutes until the sauce thickens slightly — avoid a rolling boil so the cream doesn’t split.
Return the browned meatballs to the pan, spoon the sauce over them and simmer gently for 5 minutes until the meatballs are cooked through and the sauce coats them.
Taste and adjust seasoning, sprinkle over the remaining fresh parsley and serve straight away.
