Easy packed lunch box for kids — turkey pinwheels & carrot hummus

Ingredients
- 4 wholemeal tortilla wraps
- 200 g sliced turkey breast
- 80 g mature cheddar cheese — grated
- 30 g light mayonnaise
- 200 g carrots — peeled and chopped
- 240 g tinned chickpeas — drained weight
- 30 ml olive oil
- 1 garlic clove — crushed
- 15 ml lemon juice
- 5 ml ground cumin
- 1 large cucumber — cut into sticks
- 150 g cherry tomatoes
- 200 g mixed berries — strawberries, blueberries or raspberries
- salt — to taste
- black pepper — to taste

Instructions
Make the carrot hummus: place the chopped carrots in a small saucepan, cover with cold water and bring to the boil on the hob. Simmer gently until very tender, about 12 minutes, then drain well.
Tip the drained carrots into a food processor or a deep bowl for a stick blender. Add the tinned chickpeas, olive oil, garlic clove, lemon juice and ground cumin. Blend until smooth, adding a little more olive oil or a splash of cold water if needed. Season with salt and black pepper. Spoon into a small tub and chill for 20 minutes to firm up and mellow the flavours.
Assemble the pinwheels: lay each wholemeal tortilla flat, spread a thin layer of light mayonnaise across, then top with sliced turkey and a scatter of grated mature cheddar. Roll the wrap tightly from one long edge to the other to form a log. Repeat for all wraps.
Cut each log into 6–8 bite-sized pinwheels with a sharp knife. Prepare the veg and fruit: cut the cucumber into sticks, leave cherry tomatoes whole and halve large strawberries if using.
Pack the lunchboxes: put one wrap's worth of pinwheels into each box, add a pot of the chilled carrot hummus for dipping, a handful of cucumber sticks and cherry tomatoes, and a small portion of mixed berries. Seal and keep cool until ready to eat.
Tips
- Make the hummus the evening before — chilling improves the flavour and firms the texture for easy packing.
- If your child prefers milder garlic, remove the garlic clove or use a very small amount; you can always add more next time.
- To stop pinwheels unrolling, tuck in the ends before rolling and press the seam side down when resting.
- Pack hummus in a separate small tub rather than spreading it inside the wrap to avoid sogginess.
- Use a serrated knife and a gentle sawing motion to slice pinwheels cleanly without squashing them.
