Classic Sherry Trifle
A proper British trifle: sherry-soaked sponge, a fruity jam and berry layer, set raspberry jelly, thick homemade custard and cloud-like whipped cream. Bright, boozy and showy — perfect for puddings at a dinner party or a Sunday treat.
This is the British pud that makes any celebration look like you’ve been fussing in the kitchen for hours — when in fact the humble ingredients do all the work. A sherry trifle is all about contrasts: boozy sponge, set jelly, silky custard and billowy cream.
Make it for Sunday lunch, Christmas or any time you want something showy and comforting. The homemade custard lifts it above shop-bought versions, and the layers mean you can assemble ahead and relax before guests arrive.
Ingredients
- 300 g Madeira cake or sponge fingers — about 12 sponge fingers or 300g sliced Madeira
- 120 ml medium-dry sherry
- 85 g raspberry jelly sachet (crystal jelly) — makes 500 ml jelly when prepared (follow packet if different)
- 250 ml boiling water — for jelly
- 250 ml cold water — for jelly
- 100 g raspberry jam — warmed slightly so it pours
- 300 g mixed berries (raspberries and strawberries, halved) — reserve half for garnish
- 600 ml whole milk
- 4 large egg yolks
- 75 g caster sugar (for custard)
- 40 g cornflour (cornstarch) — for thickening custard
- 5 ml vanilla extract
- 300 ml double cream (heavy cream)
- 15 ml icing sugar — for sweetening cream
- 20 g dark chocolate — for shaving on top
- salt — a pinch

Instructions
Prepare the raspberry jelly: dissolve the 85 g packet in 250 ml boiling water, stir until fully dissolved, then add 250 ml cold water. Leave to cool until just warm (do not let it set yet).
Slice the Madeira or arrange sponge fingers in the base of a large trifle bowl (or individual glasses) to form an even layer.
Brush/spoon the 120 ml sherry evenly over the sponge — aim for moist, not swimming. If you prefer a subtler boozy hit, use 60–80 ml.
Warm the raspberry jam in a small saucepan or microwave until runny (about 20–30 seconds), then spoon it over the sherry‑moistened sponge and spread lightly. Scatter half the mixed berries on top.
Pour the warm (but not hot) jelly over the sponge + fruit layer so it fills the bowl and leaves some room for custard. Chill in the fridge until completely set (about 3 hours).
While the jelly sets, make the custard: whisk the 4 egg yolks, 75 g caster sugar and 40 g cornflour together until pale. Heat 600 ml milk with 1 tsp vanilla and a pinch of salt until just below boiling (scalded).
Temper the yolks: slowly pour about one-third of the hot milk into the yolk mixture while whisking constantly, then pour the yolk mix back into the saucepan. Return to medium heat and whisk continuously until the custard thickens and comes to a gentle boil; simmer for 30–60 seconds while whisking so it is fully thickened.
Take the custard off the heat, transfer to a bowl, press cling film directly onto the surface (to prevent a skin forming) and cool to room temperature (or chill in an ice bath for 10 minutes).
Once the jelly is set, pour the cooled custard over the set jelly and smooth the top. Return the bowl to the fridge for 30 minutes to let the custard firm slightly.
Whip 300 ml double cream with 1 tbsp icing sugar and 1 tsp vanilla to soft peaks (stop before it’s over-whipped). Spoon or pipe the whipped cream over the custard, smoothing or creating peaks as you like.
Garnish with the reserved berries and shave the 20 g dark chocolate over the top. Chill the trifle for at least 1 hour before serving so the flavours marry.
Serve chilled. The trifle keeps well covered in the fridge for up to 24 hours; after that the sponge can become soggy and the presentation softens.
Tips
- Use room-temperature eggs and a warm pan so the custard comes together smoothly — but always temper the yolks with hot milk to avoid scrambling.
- Cool custard quickly by placing the bowl in an ice bath and cover the surface with cling film to stop a skin forming.
- If you like a stronger sherry flavour, add the extra 20–40 ml to the sponge, not the jelly — adding alcohol to jelly can stop it setting if you add too much.
- Assemble the whipped cream and delicate garnishes (fresh berries, chocolate) as late as you can to keep them looking fresh.
- Make the jelly and custard a day ahead and finish the cream and garnish on the day — this gives you great flavour with minimal last‑minute fuss.

FAQ
Can I make this alcohol-free for kids?
Yes — swap the sherry for equal parts orange juice or tea for a fruity or tannic note. Don’t pour alcohol into the jelly unless you reduce the amount to avoid preventing it from setting.
Can I use shop-bought custard?
You can, but homemade custard gives a much richer, silkier texture and better flavour. If using shop custard, cool it completely before pouring over the jelly.
How far ahead can I assemble the trifle?
You can prepare the jelly and custard a day ahead and keep them chilled. Assemble fully (including cream) up to 24 hours in advance; after that the sponge will absorb too much moisture and get soggy.
My custard is lumpy — can I fix it?
Pass it through a fine sieve while still warm to remove any cooked bits, then cool. If it’s very thin, return gently to the heat and whisk until it thickens, taking care not to overcook.
