10-minute smashed avocado & smoked salmon on sourdough
A speedy, luxe breakfast: smashed avocado, lemon and olive oil on toasted sourdough, topped with smoked salmon, cherry tomatoes and rocket.
This is one of my go-to 10-minute breakfasts when I want something that feels a bit special without faff. Bright avocado, salty smoked salmon and crisp sourdough — all the good things, very fast.
Perfect for busy mornings, a light weekend treat or when you want to impress without getting out a saucepan. Ready in under ten minutes and utterly moreish.
Ingredients
- 2 sourdough bread — slices
- 1 ripe avocado
- 100 g smoked salmon
- 15 ml extra virgin olive oil
- 1 lemon — use juice and a wedge to serve
- 6 cherry tomatoes — halved
- 30 g rocket
- sea salt — to taste
- black pepper — freshly ground, to taste

Instructions
Toast the sourdough slices in a toaster until golden and slightly crisp, about 2–3 minutes.
Halve and stone the avocado, scoop the flesh into a small bowl. Add the juice of half the lemon, 10 ml of the olive oil, a pinch of sea salt and a good grind of black pepper. Mash with a fork to a spreadable but slightly chunky texture (about 45–60 seconds).
Halve the cherry tomatoes and toss briefly with the remaining 5 ml olive oil and a tiny pinch of sea salt.
Spread the smashed avocado evenly over each toasted slice. Top with smoked salmon ribbons, scatter the dressed cherry tomatoes and the rocket. Finish with a grind of black pepper, a light squeeze of the remaining lemon wedge and a drizzle of any remaining olive oil.
Serve immediately while the toast is crisp and the avocado is fresh.
Tips
- Use a ripe but not overripe avocado — it should give slightly when pressed. Too soft and it becomes watery when mashed.
- Toast the bread until it’s properly crisp so it stands up to the avocado without going soggy.
- If you like a little heat, sprinkle a few chilli flakes over the finished toast or a pinch of smoked paprika for depth.
- Make the avocado mix moments before serving — it oxidises quickly and turns greyish if left too long.
- If you want to shave seconds, use pre-sliced smoked salmon and cherry tomatoes from the fridge.

Can I make this ahead?
Only the components can be prepped — halve tomatoes and keep in the fridge, and pit avocados and store with lemon juice for 30–60 minutes. For best texture, mash the avocado and toast the bread just before serving.
How do I pick a ripe avocado?
Gently squeeze near the stalk end; it should give slightly but not feel mushy. If very firm, leave at room temperature for a day to ripen.
How can I reduce salt?
Smoked salmon is the main salt contributor. Use a smaller portion of salmon or rinse briefly under cold water and pat dry to reduce surface salt, then adjust with a light pinch of sea salt if needed.
Can I add a poached or fried egg?
Yes — add a soft-poached or fried egg on top for extra protein. That will add a minute or two to the cooking time.
